Lobster Rolls

Ingredients
  

  • 3 pounds lobster tails cooked, cut into chunks
  • 3 tablespoons mayonnaise
  • 1-2 tablespoons lemon juice
  • 1/2 teaspoon Sriracha
  • 1/2 celery rib finely chopped
  • 1/4 teaspoon salt
  • pinch pepper
  • 5 hot dog buns or brioche buns
  • 3 tablespoons butter divided
  • scallions thinly sliced for garnish

Instructions
 

  • In a medium sized bowl, combine mayonnaise, lemon juice, sriracha, celery, salt and pepper.
  • Mix well until all ingredients are blended together.
  • Add lobster chunks and coat fully with mayonnaise mixture.
  • In a small skillet on low flame, add 1 tablespoon of butter until melted.
  • Add roll, top side down for 10 seconds or less, depending how dark you want your roll/bun.
  • Continue to toast roll/bun by adding 1 tablespoon of butter as needed.
  • Add lobster mixture to the toasted bun.
  • Garnish with scallions.

Notes

Serve with your favorite potato chips on the side.
