Bourbon Chicken

  • 4 boneless, skinless chicken thights
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 1/2 tablespoons sesame oil
  • 2 tablespoons olive oil
  • 1 tablespoon garlic minced
  • 2 teaspoons ginger finely chopped
  • 1 teaspoon crushed red pepper
  • 1/3 cup apple juice
  • 1/4 cup brown sugar packed
  • 2 teaspoons ketchup
  • 1 teaspoon apple cider vinegar
  • 1/2 cup chicken broth
  • 1/3 cup soy sauce
  • 1/4 cup teriyaki or coco aminos sauce
  • 1 tablespoon cornstarch or flour
  • 1 scallion thinly sliced


  • Clean chicken thighs, cut into 1-½ inch sized pieces. Sprinkle it with salt and pepper. Set aside.
  • Add sesame oil to a large skillet. Once heated, add chicken thighs, sauté until brown on both sides.
  • In a medium sized bowl, add olive oil, garlic, ginger, red pepper, apple juice, brown sugar, ketchup, apple cider vinegar, chicken broth, soy sauce, teriyaki sauce and cornstarch. Mix well until all ingredients are combined.
  • Turn over chicken in the skillet and continually stir the sauce in the bowl.
  • Once chicken is cooked, remove from the skillet and set aside.
  • Add sauce to the skillet until boiling. Lower flame and add chicken back into the skillet.
  • Garnish with thinly sliced scallions.
  • Serve with your favorite rice.
