Chicken Parmesan

  • 2 boneless chicken breasts butterflied, halved and split
  • 2 tablespoons onion powder
  • 2 tablespoons garlic powder
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 1 cup Italian breadcrumbs
  • 1 cup panko breadcrumbs
  • 1 cup flour
  • 3/4 cup parmesan cheese (reserve 1/4 cup)
  • 2 eggs
  • 3 tablespoons mayonnaise
  • 2 tablespoons oil
  • 2 tablespoons butter
  • 2 cups marinara sauce divided
  • 2 cups mozzarella
  • fresh basil for garnish


  • Clean, butterfly and halve chicken breasts.
  • Season with onion powder, garlic powder, salt and pepper.
  • In four separate pasta bowls, add Italian breadcrumbs to one bowl, panko breadcrumbs to another bowl, flour to another bowl and parmesan cheese to the last bowl.
  • In a medium sized custard cup, add eggs and mayonnaise. Whisk until the two ingredients are blended together. Set aside.
  • In a large skillet on a medium flame, add oil and butter.
  • Using one chicken breast, dredge in flour, then coat with egg mixture, then Italian breadcrumbs, panko and lastly parmesan cheese.
  • Place breaded chicken breasts in the heated skillet and pan-fry until golden brown.
  • Continue with Step #6 until all chicken is pan fried and golden brown.
  • Using a large baking dish, spread one cup of sauce evenly into the baking dish.
  • Add browned chicken breasts on top of sauce in the baking dish. Spread remaining sauce on top of chicken.
  • Cover with foil, bake for 20 - 30 minutes. Check internal temperature for doneness.
  • Remove from the oven. Add mozzarella and remaining parmesan cheese on top of the chicken. Place back in the oven until the cheese melts.
  • Garnish with fresh basil.
  • Plate your pasta, top with Chicken Parmesan.
