Lobster Ravioli

Ingredients
  

Ravioli Filling Ingredients

  • 2 cooked lobster tails small chunks
  • 1 cup ricotta cheese
  • 1 tablespoon sage leaves finely chopped
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 cup lemon juice

Pasta Dough - follow Aunt Carmen's Homemade Pasta Recipe

    Boiling Pasta

    • 4 cups water
    • 2 cups broth
    • 1/4 teaspoon salt
    • 1/4 cup water for brushing shaped and cut dough

    Sauce Ingredients

    • 2 tablespoons butter
    • 1 shallot sliced
    • 1/2 cup white wine
    • 1 cup heavy cream
    • 1 tablespoon sage chopped
    • 1/2 cup parmesan cheese
    • 1 teaspoon parsley chopped

    Instructions
     

    • Make Pasta (follow Aunt Carmen’s Recipe) Set aside.
    • In a medium sized bowl, make filling. Add lobster, ricotta cheese, sage, onion and garlic powder, salt and lemon juice. Gently mix all ingredients together until combined. Cover with plastic wrap and refrigerate until ready to place onto dough.
    • Cut dough in half and flatten using your hands. Using the stand mixer roller attachment, place one half of the dough through to flatten dough. Flatten dough until it is stretched thin and you can see through the dough. (Dough should not be too thick) Place dough on a flat surface and continue with the same process with the other half of the dough. Create two sheets of dough in equal lengths and width. If you are unable to create equal length and width, use a bench scraper or pizza cutter to get desired size
    • Using a tablespoon, spoon the lobster mixture onto the dough, leaving one inch space all around. Press around the dough to remove any air pockets.
    • Cut out ravioli shapes until the dough is finished. Brush all sides of dough with water. Set aside.
    • In a medium sized stock pot, add water, broth and salt.
    • Once water and broth begins to boil, lower flame and add stuffed ravioli.
    • In a large skillet, add butter and shallots. Once butter melts add wine, heavy cream, and sage.
    • Add cooked Lobster Ravioli to sauce. Baste top of Ravioli with sauce. Sprinkle it with parmesan cheese. Garnish with parsley. Serve immediately.
