Orange Cranberry Crumb Muffins

  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 1/4 cup sour cream
  • 2 large eggs room temperature
  • 1/3 cup orange juice
  • 2 teaspoons vanilla extract
  • 3 tablespoons orange zest
  • 2 cups flour
  • 2 1/4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cups fresh cranberries
  • cooking spray

Crumb Topping

  • 1/3 cup all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons ground cinnamon
  • 5 tablespoons butter


  • Preheat the oven to 350 degrees Fahrenheit.
  • In a large mixing bowl, add sugar, oil, milk, sour cream, eggs, orange juice and vanillaextract. Whisk together until all ingredients are combined and the batter is smooth.
  • Whisk in orange zest.
  • Add flour, baking powder and salt into the batter. Whisk together until all ingredients arecombined together and the batter is smooth.
  • Gently fold in cranberries.
  • Prepare muffin pan by generously spraying with cooking spray.
  • Using a disher, spoon batter into muffin pan pockets until each is ¾ full. Set aside.
  • In a separate medium sized bowl, add flour, sugar, and cinnamon. Whisk together.
  • Using a pastry blender or two knives, cut in the butter until it resembles small crumbs.
  • Sprinkle the crumbs on top of the cranberry batter (in the muffin pan) until all crumbs aregone.
  • Bake in the oven for 20 - 25 minutes.
