Quick Apple Empanadas

  • 2 Granny Smith apples
  • 1/2 cup granulated sugar
  • 3 tablespoons flour
  • 1 teaspoon cinnamon
  • 1 package empanada discs
  • 2 cups cooking oil


  • 2 tablespoons sugar
  • 1/2 teaspoon cinnamon


  • Peel apples and place on cutting board to core and slice the apples.
  • Once peeled and cored, cut any remaining core that was not removed. Using a paring knife, cut the sliced apples in half, lengthwise.
  • In a medium sized saucepan on a low flame, add apples, flour, sugar and cinnamon.
  • Stir continuously until the apples are caramelized and soft.
  • Prepare your empanada dough, add a large spoonful of caramelized apples to the dough. Fold over and press the fork tines around edges to seal.
  • In a large frying pan, add oil until heated.
  • Add apple empanadas until golden brown.
  • In a small separate bowl, add topping ingredients, cinnamon and sugar. Combine well.
  • Sprinkle topping over empanadas.


Serve warm.
