Quick Apple Empanadas

What dessert is better than an apple pie? One of my favorite and quickest versions of an apple pie is an Apple Empanada. This mini dessert is filled with sweetness, subtly, but holds that flavor for that sweet tooth craving. These small treasures are similar to the store bought apple pie, with the exception that these are homemade. These Quick Apple Empanadas can be fried or baked, either way, they will be enjoyed by your family and friends especially when served warm. Top these apple empanadas with your favorite ice cream and I’m sure you will be making these on a regular basis.

Where did empanadas come from/originate? According to my research, Empanadas originated in Spain. Many Spanish countries have their own version of making empanadas which have various types of fillings. Some empanadas are filled with meat, cheese and vegetable fillings or a combination of them all. With this recipe, you will be able to fill your empanadas with some sweetness, using fruit. In this blog, I am going to demonstrate how to make Quick Apple Empanadas. These empanadas can be made in 15 minutes with basic ingredients that are probably tucked in your refrigerator or pantry. Let’s gather our simple ingredients and get started!

Tools/Equipment:
Apple Corer – to slice and remove the core from apples
Dry Measuring Cups – to accurately measure dry ingredients
Cutting Board – used to cut foods on a flat surface
Dumpling Maker – used to fold, press and shape dough
Frying Pan – to pan fry empanadas
Large Spoon – to stir apple mixture and place on empanada disc
Measuring Spoons – to measure in small quantities
Medium sized saucepan – used to caramelize apples
Paring Knife -to peel outer layer of apples and halve apples
Peeler – removing the outer layer of apples

Ingredients:
Apples, sugar, flour, cinnamon, empanada disc, oil for frying
(yes, that is it, simple ingredients and quick prep time)

Quick Apple Empanadas

Step One – Using a peeler, peel, core and halve apples. (Do not sit apples for too long as enzymatic browning will occur, which will cause the apples to turn brown and lose its quality.) Using a peeler prevents wasting apple skin and completely removes the thin layer of skin on fruit. You can use the peeler with the kitchen aid mixer as well, either method will work. I found using the hand peeler was much quicker as this recipe only calls for two apples. Don’t sweat it, sometimes manual labor is the best way.

Step Two – Heat a medium sized saucepan on a low flame, add cut apples, sugar, flour and cinnamon until well blended and caramelized. The aroma from this apple and cinnamon mixture will jumpstart your taste buds into action. I became anxious anticipating the taste of these little delights. I can’t wait to inhale one of these.

Step Three – Heat oil in a frying pan while preparing your empanada dough (you can make your own dough). Place a spoonful of caramelized apples onto one side of the dough. Fold one side of dough to meet the other side. A Dumpling Maker can be used as a faster process, if pressed for time and needed to speed up the prep time.

Step Four – Using a fork, press firmly along the edges of the dough, creating a design while sealing the edges. This will prevent any apples from falling out of the dough. Also, the Dumpling Maker can be used in the place of a fork as you fill, close and press the dough together.

Step Five – Once heated, add empanadas to the frying pan with oil. Fry the empanadas until golden on each side. Do not add too much oil as you don’t want it too greasy. Pat dry with a napkin to remove the excess oil from the dough. Also, another option is, you can place cooked empanadas on top of paper towels after pan frying to absorb the oil.

Step Six – In a separate bowl, add sugar and cinnamon. Mix well. Sprinkle on top of apple empanadas. This step is optional if you do not want that added sugar. This step gives you the added sweetness from the time the empanada touches your mouth. Yummy!!!

Easy!!!! This dessert takes approximately 15 minutes, if you are heating the oil for frying while the apples are caramelizing, this will take no time from start to finish. These Quick Apple Empanadas can be baked as well. Baked uncovered for dough to quickly brown.

Remember, these Quick Apple Empanadas can be served as a snack any time of the day. They can be kept in the freezer for up to two months, just thaw and heat in the oven.
