Smothered Pork Chops

  • 4 tablespoons oil divided
  • 2 tablespoons butter
  • 1 shallot
  • 2 garlic cloves whole
  • 2 pork chops 3/4 inch thick, center cut, bone-in
  • 1 1/2 tablespoons cayenne pepper
  • 1 1/2 tablespoons garlic powder
  • 1 1/2 tablespoons onion powder
  • 1 teaspoon ground sage
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup flour

For the Gravy

  • 2 tablespoons sautéed shallots and garlic
  • 1 cup chicken/vegetable broth
  • 1/2 cup heavy cream
  • 1/2 teaspoon browning sauce


  • In a medium sized skillet, add oil and butter. Once butter is melted add shallots and garlic cloves. Sauté until onions are translucent. Remove from the pan and set aside.
  • Mix together cayenne pepper, garlic and onion powder, sage, salt and pepper. Reserve one tablespoon to add with flour
  • Season pork chops with seasonings.
  • In a medium sized bowl, add reserved seasoning to flour and dredge pork chops in seasoned flour. Shake off excess flour
  • Add two tablespoons of oil to the skillet, (add additional oil if needed) once heated, add pork chops and pan fry both sides until a golden crust appears. Set aside.
  • On high heat, add sautéed onions and garlic back into the skillet. Add broth, heavy cream and browning sauce.
  • Lower flame and continue to boil gravy until thickened
  • Add pork chops for an additional 10 minutes. Basting every few minutes.
  • Serve with cooked rice, vegetables, and cornbread.
