
Stuffed Shrimp
Ingredients
- 10 large shrimp butterflied
- 2 slices toasted buttered bread large diced
- 1 celery stalk large cuts
- 1/2 onion large cuts
- 1 teaspoon oregano
- 1 teaspoon basil
- 1/2 teaspoon parsley
- 1/2 teaspoon salt
- 1 cup chicken or vegetable broth
- 2 tablespoons lemon juice optional
- 1 cup crab meat
- 1/4 cup seasoned bread crumbs
- 3 tablespoons butter melted
Instructions
- Preheat the oven to 350 degrees F.
- Clean and butterfly shrimp and place into a 9 x 13” baking dish.
- Place diced bread, celery, onion, oregano, basil, parsley and salt in a food processor until crumbly.
- Remove bread mixture from food processor and add to a medium sized bowl.
- Add broth, lemon juice, crab meat and bread crumbs. Combine all ingredients well.
- Place bread stuffing on top of butterflied shrimp. Create a mound using all of the stuffing.
- Drizzle butter over the stuffing.
- Cover with foil and bake for 15 minutes.
- Remove foil and broil for 5 minutes.
