The Best Shrimp and Grits

Who thought of the idea to pair shrimp with grits? Whoever is the genius behind making this combination should be awarded some type of medal. The “Shrimp and Grits” dish gained its popularity from southern states, but can be seen on menus all across the United States. Shrimp and Grits are usually served as part of a breakfast menu, but in my travels, I have seen this dish served for lunch and dinner as well. Before I get into showing you how to prepare Shrimp and Grits, I will share a quick story about why this dish was recently made.

After a night of catching up on life happenings, my friend and her hubby were exhausted and too tired to take the drive home, so they stayed overnight. I wanted them to have a good breakfast in the morning, but when I looked in my refrigerator there was not enough food for their pescatarian diet. I looked in the freezer, lo and behold there was a bag of extra large shrimp. Instantly, I knew what was going to be made, my classical “Shrimp and Grits” dish.

In the morning, I quickly began to gather all of my ingredients to make certain that I would be able to make this dish for four people. My mind was racing at the thought of serving this dish as long as there were enough shrimps, I was golden and would be cooking with gas!!!! Yes!!! I was very excited just thinking about plating this dish! After putting this together in less than 30 minutes, I wanted the presentation to be on point, thank goodness, I had the perfect garnish, scallions. Yes, Yes, Yes!

Once the Shrimp and Grits were plated and put in front of my friends, they started clapping with excitement from the presentation set before them. I was very happy to get a standing ovation from my friends before and after the meal. We laughed and laughed about it. They enjoyed it so much that my friend took pictures and posted it on her Instagram page, asked for the recipe and could not stop raving about it, showering me with much love. I was very pleased with myself for making my friends feel special and made a promise that day, this dish will be made at least once a month for them.

I think of this moment and reminisce about the Shrimp and Grits being the last dish that I made for my dear friend. Her shocking death was very heartbreaking to me and so many others who loved her. She was young, full of life and adventure, very intelligent and an angel with wings wide enough to embrace an army of people at once. As this picture popped up on my phone the other day, I was able to smile, just thinking of my friend’s smile, when eating this dish.

Ingredients for shrimp: butter, oil, onion powder, paprika, cayenne pepper, thyme, garlic powder, salt, shrimps

Ingredients for grits: chicken broth, milk, butter, salt, grits, cheddar cheese

Step One – Prepare your ingredients for grits as this is the first thing to make for the Shrimp and Grits to be ready in 30 minutes. Sounds good!! Get those tastebuds ready! In a medium sized saucepan/pot, add broth, milk, butter and salt. Bring to a boil.

Step Two – Once boiling, add grits to the sauce pan/pot, stir with a wooden spoon, every few minutes. The reason you want to keep stirring is to eliminate the grits from clumping. The grits should be separate grains that are about to become a creamy texture with the addition of the liquids. Lower flame and continue to cook for about 15 – 20 minutes.

Step Three – While the grits are cooking, clean and season shrimp with onion powder, paprika, garlic powder, cayenne pepper, thyme and salt.

The shrimp that I use to make these Shrimp and Grits are extra large in size and come partially clean. Some folks do not have issues with veined shrimps, my preference is deveined shrimps, please, thank you!

Step Four – Prepare your non-stick cookware/skillet to cook shrimp by adding oil and butter until heated and melted.

Step Five – Add shrimp and sauté until opaque in color on both sides and curled. Continue to stir grits until somewhat thickened. Grits are best when they are not too thin in texture. If too thin, continue to heat on a very low flame.

Step Six – Once grits are cooked, add shredded cheese and stir in slightly. There are different types of cheese that can be used at this point, cheddar, monterey jack, Velveeta, even American. I love to use cheddar.

Step Seven – Prepare your plate by adding a heaping serving spoon of grits, topped with shrimp and garnished with bacon bits and scallions.
