Turkey Brine

Servings 1 whole turkey

Ingredients
  

  • 2 gallons water divided
  • 3/4 cup kosher salt
  • 1 turkey 14-20 pounds
  • 2 onions large cuts
  • 2 lemons peel only
  • 4 sprigs fresh thyme
  • 4 sprigs fresh rosemary
  • 4 sprigs fresh sage
  • 1 - 1 1/2 bags ice

Instructions
 

  • In a large stockpot, boil 1 gallon of water.
  • Add salt and stir.
  • Using a large cooler, add turkey, boiled salt water, additional water and remaining ingredients.
  • Using a large spoon, stir until well blended with turkey.
  • Add ice to cooler and keep in cold place overnight.
